Wild Cashew Cheese with Spring Herbs

INGREDIENTS
Liquid:
20 g Cashew Butter
20 g extra virgin olive oil
60 g lemon juice
300 ml water
Solid:
150 g Raw Cashews
60 g corn flour
20 g nutritional yeast
8-12 g salt (depending on your preferences)
1/3 tsp garlic powder
For serving:
thyme – rosemary – oregano – paprika – sesame seed
Instructions
- Combine all the ingredients in a sturdy blender and blend on high speed until the mixture is smooth and free of lumps.
- Transfer the mixture to a saucepan and heat over medium heat.
- Stir constantly until the mixture begins to thicken.
- After a few minutes, the mixture will change texture and become a thick paste.
- Transfer the paste to a well-oiled plate and press it firmly with a spatula to shape it evenly.
- Refrigerate for at least 1 hour or until completely chilled.
- Once chilled, unmold the mixture and sprinkle with herbs, spices, or toppings of your choice.
- Allow it to firm up and develop flavor in the refrigerator.
