Peanut Butter Noodles with Veggies

INGREDIENTS
For the Base:
1 large cucumber
1 large carrot
1 red pepper
150 g edamame beans (boiled)
2 servings of rice noodles
For the sauce:
70 g Peanut Butter
2 tbsp soy sauce
2 tbsp apple cider vinegar
1 tbsp agave syrup
1 tbsp Sesame Oil
Juice & zest of ½ a lime
Salt & Pepper
3 tbsp water
For serving:
Fresh onion
Peanuts
Instructions
- Prepare the sauce by mixing all the ingredients in a bowl until smooth.
- Cut the cucumber and carrot into long thin strips with a peeler.
- Cut the pepper into thin strips.
- Boil the edamame beans in salted water for 3 minutes, strain and rinse with cold water.
- Put boiling water in a bowl and place the noodles in it for 3-5 minutes.
- Strain them, rinse them with cold water and add a little sesame oil so they don’t stick.
- In a large bowl, put the vegetables, the edamame beans, the noodles, the sauce, a little salt and mix very well.
- Serve with chopped spring onion and coarsely chopped peanuts.
