INGREDIENTS

Solid:

370 g chopped raw broccoli

50 g chopped raw red onion

80 g chopped strawberries

150 g chopped raw zucchini that we have removed the seeds from

120 g raw black rice

For the dressing:

50 g Hazelnut Butter 

35 g olive oil

45 g apple cider vinegar

40 g Forest Fruits Jam or Strawberry Jam 

Sea ​​salt & freshly ground black pepper

For serving:

50 g coarsely chopped Roasted Hazelnuts  

Instructions 

  1. Cook the black rice according to the package instructions until it reaches desired softness.
  2. Cut the broccoli florets and stalk into small, uniform pieces. Finely chop the red onion, zucchini, and strawberries.
  3. Combine all the vegetables and cooked rice in a large bowl.
  4. Set aside while you prepare the dressing.
  5. For the dressing, whisk together all the ingredients until well combined, then pour over the salad.
  6. Garnish with coarsely chopped hazelnuts.
  7. While the salad can be served immediately, it’s even more flavorful when allowed to cool and marinate in the refrigerator for at least 30 minutes to a day.
