Salad with Raw Broccoli and Hazelnuts

INGREDIENTS
Solid:
370 g chopped raw broccoli
50 g chopped raw red onion
80 g chopped strawberries
150 g chopped raw zucchini that we have removed the seeds from
120 g raw black rice
For the dressing:
50 g Hazelnut Butter
35 g olive oil
45 g apple cider vinegar
40 g Forest Fruits Jam or Strawberry Jam
Sea salt & freshly ground black pepper
For serving:
50 g coarsely chopped Roasted Hazelnuts
Instructions
- Cook the black rice according to the package instructions until it reaches desired softness.
- Cut the broccoli florets and stalk into small, uniform pieces. Finely chop the red onion, zucchini, and strawberries.
- Combine all the vegetables and cooked rice in a large bowl.
- Set aside while you prepare the dressing.
- For the dressing, whisk together all the ingredients until well combined, then pour over the salad.
- Garnish with coarsely chopped hazelnuts.
- While the salad can be served immediately, it’s even more flavorful when allowed to cool and marinate in the refrigerator for at least 30 minutes to a day.
